1-2 handfuls of chopped kale

Shreaded carrots

Cheery Tomatoes

Avocado

Nuts (peanuts, chopped almonds, walnuts, pecans, etc)

Seeds (pumpkin, sunflower, etc)

Grated Cheese

Cooked Quinoa

Dressing

3-parts Apple Cider Vinegar

3-parts Olive Oil

1-part Dijon Mustard

1-part Honey

Salt and Pepper to taste

Instructions

  1. Add dressing ingredients in a small bowl or container and mix.
  2. Add salad ingredients to large bowl.
  3. Add dressing to salad.
  4. Enjoy!
